As the Villatoro family has earned a reputation for producing exceptional coffees in Hoja Blanca, they’ve never kept that knowledge to themselves. Their approach to quality has always been communal—rooted in shared learning and mutual support among their extended family.
This Bourbon Especial reflects that collaborative spirit. Grown across several family farms—El Aguacatal, El Milagro, El Diamante, and Punta Del Cerro—these Bourbon trees are cultivated at high elevations where slower cherry maturation leads to remarkable sweetness and clarity. Bourbon also comes with challenges: it’s susceptible to disease and requires careful pruning, soil management, and close attention throughout the year. The family’s collective experience makes this work possible.
The cherries selected for this lot come from the upper reaches of each farm, where the slower ripening process deepens flavor and complexity. After harvesting, the coffee is depulped immediately, then wet-fermented for 36–48 hours depending on temperature and climate conditions. It is then washed and dried slowly for 16 days on covered raised beds.
