It is here that Rodin Villatoro explores new processing techniques, including this carefully controlled anaerobic fermentation. Freshly harvested cherries are placed in sealed, oxygen-free barrels, encouraging the natural breakdown of sugars to create bright, layered flavor complexity. Timing is everything — and Rodin’s skill lies in knowing exactly when to stop the fermentation for the most expressive cup.
