This standout Pink Bourbon comes from El Mesón, Colombia, where Viviana Realpe and her husband Pablo Muñoz farm two family-run properties: Finca Los Nogales and Finca Miraflores. At just 31 years old, Viviana is part of a new generation of Colombian producers—deeply rooted, highly intentional, and relentlessly thoughtful in her craft.

This lot is a careful separation of Viviana’s Pink Bourbon, a variety prized for its complexity—and notoriously difficult to harvest. Unlike traditional red cherries, Pink Bourbon ripens to a pink-orange hue, making precise picking essential. Viviana pays a premium to skilled pickers who can identify cherries at peak ripeness, working alongside her family during harvest.

After picking, cherries are floated to remove defects, then fermented for 24 hours before depulping. The coffee undergoes a second fermentation for 40 hours, followed by a meticulous two-stage drying process that spans 3–4 weeks. The result is a dazzling, expressive cup with layered fruit character and vibrant clarity.

Beyond the cup, Viviana is deeply involved in her local community as secretary of the Los Guácharos farmers group, where she is one of just five women among twenty-one members. Alongside Pablo, she continues to invest in their farms—replanting thousands of saplings, building fermentation tanks, installing a pulley system, and constructing a parabolic drying patio to gain full control over quality.
