Rosa Perez owns and operates Finca Las Pierdas, using the income to support her family and invest in her children's future. A founding member of the Rutas del Inca cooperative, Rosa is renowned for her strength, grit, and perseverance, running the farm after becoming a single parent of six a decade and a half ago. This lot from Rosa is a special processing of her Typica & Caturra varieties. After harvesting the coffee cherries, Rosa floats the coffees, removing any floating cherries or debris. She then ferments the coffee cherries in airtight containers for two days, before depulping and fermenting again for 72 hours. After her second fermentation Rosa washes the coffee and dries it on raised beds for around 20 days.
