Hugo Melo is a coffee producer in Alto del Obispo in Huila, a region of Southwestern Colombia. Hugo cultivates multiple plots of land belonging to himself and his family. All the plots of land are under the name Renacer, although Hugo’s plot is named Finca El Cedro.
Chiroso is a newly emerging coffee variety from Antioquia, in northern Colombia. Still mostly found in Colombia, Chiroso has been dubbed the Pink Bourbon of Antioquia, due to its fruity and floral cup profile and is quickly becoming more popular. Producing large beans, Chiroso is the Colombian name for the variety, given by Antioquian locals due to the coffee beans' abnormal length. Study of the Chiroso variety is ongoing, however it is generally thought to be a regression of the bourbon variety and may have genetic links to Ethiopian coffee varieties.
After acquiring the Chiroso, Hugo immediately created a nursery at Renacer, planting a small plot at his farm with the Chiroso seedlings the following year. Now 5 years after planting, the trees have matured and are producing viable crops. As a small plot, the Chiroso trees are just a small portion of the 1500 trees that Hugo cultivates.
When harvest time comes, Hugo keeps his harvest from his Chiroso trees separate from the rest of his farm's production to the high quality of the variety. After harvesting the Chiroso Cherries Hugo pre ferments the cherries in sacks for 48 hours. Once the pre ferment is complete he floats the cherries in buckets of water, removing any unripe cherries and all foreign materials. After floating, the coffee is depulped, removing the fruit of the coffee cherry from the seed/bean, and fermented for a second time in sealed barrels for up to 70 hours. After the second ferment, the coffee is washed and then dried in covered patios. The finished Chiroso creates a striking coffee with delightful yet soft fruit tones.
