In southeastern Ethiopia, Yirgacheffe is renowned for its consistently intriguing coffees. Grown between 1800 and 2000 meters above sea level, the Kercha subregion's microclimate significantly influences the enzymatic flavor profile of YirgZ. After harvesting, the coffee is fully washed and dried on raised beds, with extra care taken to protect it from the powerful midday sun.

The "Z" in YirgZ indicates a lot free from defects, meaning zero defects. Defects, which include bad beans of various types or foreign materials, are commonly found even in high-quality coffees. The removal of every defect in YirgZ is meticulously done by groups of women who hand-sort the lot after the milling process, examining each bean individually. These women are paid three times their usual income to sort YirgZ compared to other coffees.
