On a small mountainside plot beside his family home, Aurelio’s son, Rodin, has cultivated a garden of possibilities. Here, he grows a range of coffee varieties—Caturra, Yellow Catuai, Red Bourbon, and Gesha—while also experimenting with a lesser-known type: Pacamara. A cross between the Maragogipe and Pacas varieties, Pacamara is celebrated for its large bean size and exceptional flavor profile. However, it’s notoriously challenging to grow, being highly susceptible to leaf rust.

Rodin, like his father, embraces these challenges in pursuit of superior quality. His Pacamara coffee is a testament to their family’s deep-rooted tradition in coffee cultivation, showcasing both the terroir that has made their beans beloved for years and the bold new directions Rodin and his brother Jenner are forging.

The flavor profile is vibrant and bright, featuring lively notes of lime, caramel, marshmallow, cherry, strawberry, lavender, and mint, all enveloped in a rounded body with crisp acidity.

Body: Syrupy with bright acidity

Just steps from where a future fountain is planned, a small structure holds several bright yellow barrels, each filled to the brim with coffee cherries. In these barrels, Rodin’s passion project—the Villaure Mosto Process—takes shape. This method is a unique twist on anaerobic fermentation, in which coffee ferments in airtight containers, devoid of oxygen, to develop distinctive flavors. The Mosto Process adds an intriguing step: as the whole cherries ferment, they naturally release juices during sugar breakdown. These juices are then reintroduced to a fresh batch of cherries, giving rise to the Mosto Process.

While many anaerobic methods can sometimes produce overpowering or imbalanced flavors, Rodin’s expert touch results in a cup that’s rich, bold, and beautifully balanced. With notes of coconut, cantaloupe, vanilla, and nutmeg wrapped in a smooth, full body, this coffee embodies the Villatoro family’s innovative spirit and commitment to redefining what coffee can be.

Tasting Notes: Dark Chocolate, Dried Dates, Honey

Body: Smooth with delicate acidity

Since 2005, the Villatoros have stood as the cornerstone of our annual coffee offerings. Aurelio, Aracelli, Jenner, Rodin, and Crista, as a family, consistently elevate and refine their coffee production and operations, gaining global acclaim for their unwavering commitment to delivering high-quality coffee.

In 2017, Jenner and Rodin, in partnership with their cousin Dennis, acquired the Punta Del Cerro farm. Nestled in a mountain valley, the farm boasts white-faced cliffs that overlook the drying patios. Punta Del Cerro's expansive wet mill not only processes coffee from the farm itself but also handles coffee from their cousins' farms in the surrounding area.

Introducing our exclusive blend - Primos Unidos, meaning Cousins United - a collaboration of the coffee expertise of Rodin, Jenner, Dennis, Maikel, Riner, and Milton. These cousins cultivate their coffee on farms situated outside the villages of Hoja Blanca and Pena Roja. Our medium roast accentuates the rich notes of dark chocolate, dried dates, and molasses, providing a sensory journey that reflects the dedication and skill of the Villatoro family.
