The Inga community of Aponte has resided in the Narino highlands of Southwestern Colombia for centuries, utilizing the mountains as a sanctuary from conquest and external turmoil throughout their history. Over the last decade, the community has ventured into cultivating coffee, benefiting from the fertile volcanic soil surrounding the Galeras Volcano. This particular lot exemplifies the honey processing method.
Following the harvest, each farmer within the community pulps their Caturra variety coffee cherries while preserving the honey/pectin layer surrounding the beans. Subsequently, the coffee undergoes drying in solar dryers before being transported to town and combined into this exquisite community lot. This marks the sixth year of offering the Aponte honey, consistently resulting in a remarkably sweet coffee. Tasting notes include apricot, caramel, peach and marshmallow.
