Guatemala Aguacatal Bourbon Especial - Founded in 1958, El Aguacatal was left to Petronilo Martinez by his father. Now he owns and operates the farm with his son Petronilo Jesus Martinez in Hoja Blanca, Guatemala. Father in law to Aurelio Villatoro the families harvest, process and dry all their coffee together. Their houses, in the village of Hoja Blanca, all have flat cement rooftops to dry their coffee in the sun and provide even terrain in the steep valley. The cousins have also studied and graduated university with degrees that are directly applicable to the family coffee business, agroforestry & agronomy to name a few. Special care was taken in selecting and processing this nano lot. Washed immediately after harvest, this coffee is then fermented for 36 hours, before being meticulously dried on covered raised beds for 16 days. The resulting cup is a beauty with notes of dried raspberry, orange zest, grape, and a sweet spiciness.
